• 2 cups All-Purpose Flour

• 1/2 cup Bran Cereal

• 1/2 cup Granulated Sugar

• 2 teaspoons Baking Soda

• 1 teaspoon Cinnamon

• 1/4 teaspoon Salt

• 1/2 cup Butter, softened

• 1 large Egg

• 1 cup Mashed Ripe Bananas (about 2-3)


  • Preheat oven to 350°F. Grease or line twelve muffin cups with paper liners.
  • In a medium bowl, whisk together the flour, bran cereal, sugar, baking soda, cinnamon, and salt.
  • In a separate bowl, beat the butter and egg together. Add the mashed bananas and mix until combined.
  • Gradually add the dry ingredients into the wet mixture and mix until just combined.
  • Divide the batter evenly between the muffin cups and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  • Remove from the oven and allow to cool for a few minutes before serving. Enjoy!
