Banana Bread Muffin-Fruit Recipe

Bananas are high in vitamins like vitamin B6 and C and they contain a lot of potassium in them. One single banana contains 108 calories, 1.22 g of protein, and 3 g of fiber and 27 g of carbohydrates. They are available throughout the year and you can make this recipe whenever you want to and at the same time they are less expensive.

Generally, the ripening period of banana is too early and one can make the best use of them as early as possible, especially the kids do not love over-ripened bananas. Ingredients

  • ¾ cup of whole wheat flour
  • ¾ cup of white flour
  • 1 ½ teaspoon of baking powder
  • ¼ teaspoon of baking soda
  • ½ teaspoon of ground cinnamon
  • ½ cup of granulated sugar
  • 1/8 teaspoon of  nutmeg
  • 2 eggs
  • ¼ cup of canola oil
  • 1 cup of mashed bananas
  • 2 table spoon of plain yogurt
  • ½ cup of sweetened coconut
  • ½ cup of crushed walnuts

Instructions

  1. Mix the dry ingredients (first seven items mentioned in the ingredients list) together.
  2. Combine eggs, canola oil, mashed bananas and plain yogurt (according to the quantity measured in the ingredients list) in a separate bowl.
  3. Now, mix the wet ingredients into the dry until it is moistened and drop the batter into the muffin tin.
  4. Sprinkle sweetened coconut and crushed walnuts each muffin mixture.
  5. Bake in oven at 350 F for 15 to 20 minutes or until the muffin be cooked properly.
