Banana Cake with Cream Cheese Frosting Fruit Recipe

Bananas are known for its high calorific content and they are a great source of vitamins and minerals. Bananas are available throughout the year and they are generally imported to places that cannot grow them. As they are less expensive they can be purchased easily without any difficulty. While purchasing, pick the ones which have less brown spots on them as these brown spots indicate how much ripened they are. However, ripened bananas can be used for baking or smoothies. Bananas are best in flavor when they are consumed without storing them for a very long time. They can be stored in fridges to postpone ripening for some days. Making a banana cake is very easy and when it is mixed with some cheese it sounds delicious. Below you can find the ingredients and the instructions that are needed to prepare this mouth watering recipe.

Ingredients

  • 1 1/2 cups of mashed bananas( ripe)
  • 2 teaspoons of lemon juice
  • 3 cups of flour
  • 1 1/2 teaspoons of baking soda
  • 1/4 teaspoon of salt
  • 3/4 cup of softened butter
  • 2 1/8 cups of sugar
  • 3 large eggs
  • 2 teaspoons of vanilla
  • 1 1/2 cups of buttermilk

Frosting

  • 1/2 cup of softened butter
  • 1 pack of soft cream cheese
  • 1 teaspoon of vanilla
  • 3 1/2 cups of icing sugar

Garnish

  • chopped walnut

Instructions

1. Preheat the oven to 275 degrees and grease and flour a 9X13 pan.
2. In a small bowl, mix the smashed banana with lime juice and leave it undisturbed for some time.
3. In another separate medium bowl, combine flour, baking soda and salt and leave it undisturbed for some time.
4. In a large bowl, combine ¾ cup of butter and 2 1/8 cups of sugar until it becomes fluffy.
5. Beat the eggs one at a time and then stir in with two teaspoon of vanilla.
6. Beat the flour mixture alternatively with buttermilk and stir in the banana mixture.
7. Pour batter into a prepared pan and bake it in an oven for one hour or until it is completely baked.
8. In order to make the cake moist, remove it from the oven and place it directly into the freezer for about 45 minutes.
9. For frosting, cream the butter and cheese until it becomes smooth and beat in 1 teaspoon of vanilla.
10. Add icy sugar and beat them on low speed initially and then turn it to high until the frosting becomes smooth.
11. Spread on cooled cake and sprinkle chopped walnuts over top of the frosting to add extra taste. This step is an optional one.

This may take about 1hour and 15 minutes to cook but its preparation time is just 15 minutes. The amount of ingredient that we used can serve for about 16 people and cupcakes can also be made in this type. This is a versatile cake that can be made during festivals and on special occasions.
