Spiced Honeyed Apricots-Fruit Recipe

Apricots are very good for our health as they contain a lot of vitamins and potassium. Dried apricots are available throughout the year and they can be found in abundance in a particular season between May and August. While purchasing, choose the ones which are soft and orange in color and not the ones having green, yellow or pale spots. Apricots can be distinguished from their aroma, indicating they are ready to eat. Apricots are very fragile and they quickly get ripened and so one can keep them in fridge. Even by doing this, it can only postpone ripening up to three days. Below you can find the ingredients needed for this recipe followed by the instructions.

·         1 ½ cup of water
·         1/3 cup of turbinado sugar
·         2 tablespoons of honey
·         2 strips of orange zest
·         1 cinnamon stick
·         2 star anise pods
·         6 fresh apricots
·         1-2 teaspoons of fresh lemon juice

Instructions

1.   Simmer the first six ingredients through star anise in a medium saucepan for about 15 to 20 minutes.
2.     Stir in the apricots and simmer the mixture for about 3 minutes.
3.     Allow the recipe to cool down at room temperature for about an hour.
4.     Now remove the star anise and cinnamon stick.
5.     Add lemon juice for a better flavor.
