Fig and Almond Bars-Fruit Recipe

Figs are a good source of fiber, potassium, manganese and vitamin and they are available in season from June to October. While purchasing figs choose the ones which are clean, dry, and smooth with unbroken skin and definitely not the ones which are mushy.

When it comes to storage, it is better to use them up fresh as possible or if not it can be stored in a plastic bag in the coldest part of your refrigerator for up to two days. There are millions recipe to be made with fig fruit and one among them is the Fig and Almond bars.

  • 1 cup of All-Bran Cereal(crushed slightly)
  • ¼ cup of whole wheat flour
  • 1 cup of sliced almonds
  • 1 cup of oats
  • 1 cup of finely chopped dried figs
  • 2 TBL of chopped raisins
  • 2 TBL of sunflower seeds(shelled)(pulsed or chopped slightly)
  • ½ cup of dried milk powder
  • ½ teaspoon of cinnamon
  • 2 eggs
  • ½ cup of honey
  • ½ teaspoon of vanilla

Instructions

  1. Combine the first nine ingredients which are mentioned above and put it in a food processor.
  2. Then add the last three ingredients- egg, honey and vanilla.
  3. Combine all the ingredients together now and pour it into a 9X13 pan.
  4. Cook it at 350 F for 20 minutes or until it is cooked properly.

This recipe is much needed for growing kids and they serve as a great snack before an event like soccer game.
