Toasted Coconut Pumpkin Bread-Fruit Recipe

Coconuts are found throughout the year however their peak season is between October and December. While purchasing go for the coconuts which are lighter in weight as heavier ones denote they are more ripened. The only way of finding whether the coconut is in good condition or not is by cracking or bruising it. Coconuts can be stored at normal room temperature for many years until its meat is grated.   • 1/3 cup of melted coconut oil
  • ½ cup of honey
  • 2 eggs
  • 1 cup of pumpkin cream(obtained from crushed pumpkin)
  • 1 teaspoon of vanilla extract
  • ¼ cup of hot water
  • ½ teaspoon of salt
  • ½ teaspoon of cinnamon
  • ½ teaspoon of ginger
  • ¼ teaspoon of nutmeg
  • ¼ teaspoon of cloves
  • 1 cup of whole wheat flour
  • ¾ cup of all purpose flour
  • ¼ teaspoon of baking powder
  • 1 teaspoon of baking soda


1. Preheat the oven to 325 degrees F and grease a 9*5 inch loaf pan.
2. Mix oil, honey eggs, water and vanilla together in a large bowl and stir in the pumpkin cream.
3. In another bowl mix salt, cinnamon, ginger, nutmeg and allspice, flour, baking powder and baking soda together and sir it nicely.
4. Mix the dry ingredients with the wet ingredients and pour it into the loaf pan.
5. Sprinkle some toasted coconut on the mixture and bake it for 1 hour and do not forget to insert a tooth pick in the top.
6. Allow the bread to cool down for 5 minutes in the pan and then transfer it onto the wire rack.
