Grapefruit, Lime & Mint Yogurt Parfait Recipe
GRAPEFRUIT LIME MINT YOGURT PARFAIT
Grapefruit parfait is very healthy and easy to make. 1 parfait contain 115mg sodium, 10g protein, 207 calories, 2g saturated fat, 10mg cholesterol, 3g fiber.
- 3 Tbsp honey
- 4 large red grapefruit
- 2 teaspoons lime zest
- 4 cups plain yogurt
- 2 Tbsp lime juice
- Fresh mint leaves
- Cut a thin slice from the top and bottom of each grapefruit, cut off peel and outer membrane from grapefruit. Cut along the membrane of each segment to remove fruit.
- In a large bowl, mix yogurt, lime zest and juice. Layer half of the grapefruit and half of the yogurt mixture into 6 parfait glasses. Repeat layers. Drizzle with honey, top with mint.
