Heart-Healthy Berry Quinoa Salad


– 1 cup cooked quinoa (cooled)

– 1 cup mixed berries (strawberries, raspberries, blackberries)

– 1/4 cup chopped nuts (walnuts or almonds)

– 2 tablespoons crumbled feta cheese

– 2 tablespoons olive oil

– 1 tablespoon balsamic vinegar

– Salt and pepper to taste

– Fresh spinach leaves (optional)


1. In a large bowl, combine the cooled quinoa, mixed berries, chopped nuts, and feta cheese.

2. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper to create the dressing.

3. Pour the dressing over the quinoa mixture and toss to combine.

4. Serve over a bed of fresh spinach leaves for an extra nutrient boost.
