Strawberry Muffins

Strawberries are good source of vitamin C, manganese and fiber and they are rich in antioxidants. It prevents aging and helps in removing the wrinkles from our faces. They have many health benefits and consuming them can boost one’s immune systems and one can be free from the harmful free radicals causing diseases. The availability of these fruits has become very easy these days as there are many supermarkets all over the world. It can be stored in refrigerator to avoid ripening but for best flavor it is better to consume it as fresh as possible.

  • 1 3/4 cups of all-purpose flour
  • 2/3 cup of granulated sugar
  • 2 teaspoons of  baking powder
  • 1/2 cup of milk
  • 1/2 cup of melted butter
  • 2 eggs which are beaten nicely
  • 1 teaspoon of vanilla extract
  • 1 cup of fresh strawberries, chopped and tossed lightly in
  • 2 tablespoons of flour

Streusel

  • 1/4 cup of chopped toasted pecans
  • 1/4 cup of packed brown sugar
  • 1/4 cup of all-purpose flour
  • 2 tablespoons of melted butter

Strawberry Butter

  • 1/2 cup of softened butter
  • 1 cup of confectioners’ sugar
  • 1/2 cup of chopped fresh strawberries
  • 1/4 cup of finely chopped toasted pecans

Instructions

  1. Preheat the oven to 375 degree F and grease the bottom and sides of 18 muffin tins.
  2. Mix all the ingredients mentioned in streusel and stir it together and set aside.
  3. Mix the flour, sugar and baking soda for the muffins and in a separate bowl mix the milk, melted butter, beaten eggs and vanilla together.
  4. Gently mix the wet ingredients into the flour mixture and stir them well.
  5. Now add chopped strawberries to the above mixture and pour the mixture into prepared muffin tins and top with streusel mixture.
  6. Bake it for 25 to 30 minutes at 375 F until it is completely baked and comes out clean.
  7. Allow muffins to cool for 10 minutes before removing them from the pan and cool it on a wire rack.
  8. To make the strawberry butter, combine the soft butter and powdered sugar thoroughly together and fold in the chopped strawberries and toasted pecans.
  9. Chill until needed and soften before serving on split muffins.

This recipe takes about 40 minutes to prepare and serves 18 adults. This recipe can be made on special occasions during festival days and birthday parties to add more fun to it. It can be served as an evening snack item for children or for the ones who return home from office.
