Miracle fruit, miraculous fruit or sweet berry – a small bright red, ellipsoid berry approximately 2 to 3 cm long with single seed. The miracle occurs after eating the fleshy part of the berry. It causes sour and bitter foods to taste sweet. The miracle fruit itself has very low sugar content.

Miracle fruit does not taste sweet by itself but when combined with bitter and sour foods it transforms their flavor to taste sweet. It has a short shelf life only lasting for 3-4 days. You can find the miracle berry in dried form or encapsulated into pills.

The miracle fruit plant can be grown indoors with a T5 fluorescent growing light. It mimics the indirect sunlight that it would receive in nature. The plant can self pollinate itself and bears many fruits. It contains a protein molecule called miraculin which binds to the taste buds. It distorts the sweet sensory input to respond to acids and replicates the effect of sugar.

The fruit had low calorie sweetening abilities, hence it’s best suited for diabetic patients.

Tomato is the world’s most popular fruit. Botanically speaking tomato is a kind of fruit, not a vegetable like the brinjal and the pumpkin. More than 60 million tons of tomatoes are produced per year.

Tomatoes were first cultivated in 700 AD by Aztecs and Incas. The French people called it as “the apple of love” and the Germans “the apple of paradise.” Tomatoes are rich in vitamin A, vitamin C and fiber and cholesterol free.

New medical research recommends that the consumption of lycopene (the stuff that makes tomatoes red) and it may prevent cancer. Lycopene is the most powerful antioxidant in the carotenoid family. They have natural compounds that create the colors of fruits and vegetables. They are rich in vitamins C and E; protect us from the free radicals that degrade many parts of the body. Tomatoes are used in many food product likely tomato sauce, pasta and pizza. According to the Council of Steel Packing survey in 1997, 68% of chefs use canned tomatoes for convenience and flavoring.

The scientific term for the common tomato is lycopersicon lycopersicum, and it mean “wolf peach”. Tomato is a cousin of the eggplant, red pepper, ground cherry, potato and also commonly known as nightshade or solanaccae. There are nearly 10,000 varieties of tomatoes.

Do not store ripened tomatoes in the fridge where cooked tomatoes have higher concentrations of lycopene than non-cooked tomatoes.

Steps to follow:

  • First degrade the fruit wastes of fruits like apples, oranges, lemons, limes and tomatoes by adding Pectinase and/or Cellulase to the fruit waste.
  • Incubate them in a mixture of enzyme and water. After 2 hours, measure the percent decrease from the original mass of the waste.
  • If there will be the change in concentration of the enzyme, then the length of incubation would decrease the amount of fruit waste.
  • Pectinase was the most resourceful enzyme to degrade the fruit waste. It had an average of 53.6% decrease from the waste’s original mass. Cellulose had an average of 26.4% decrease from the original mass.
  • Pectinase and Cellulose helps to degrade a higher percentage of the fruit waste were as the length of time and the amount of concentration of the enzyme increased.
  • At last large amounts of fruit waste can be degraded using Pectinase. While the minimized waste can be converted into ethanol by attacking the cellulose using enzymes to make sugar and to ferment those sugars and converts it into ethanol.
